angel cake

When your boyfriend thoughtfully bakes you what is sure to be a spectacular birthday cake but his friend accidentally throws it in the trash,* it is Hailee Catalano to the rescue. In the sea of recipe creators populating your email inboxes, Instagram feeds, and TikTok scrolls, Hailee stands out with her tranquil how-tos and easy Midwestern charm—sometimes I turn to her channel just to destress. Unsurprisingly, her strawberry and cream cake had a dulcet effect, stepping in to quell any dessert anxieties (though not the anxieties of leaving my twenties). So no, it’s not an angel food cake, but Ms. Catalano is, henceforth, my guardian angel. 👼

When I usually think of birthday cakes, I picture something grand, but this didn’t feel suitable when making my own—an activity I revel in, contrary to popular opinion.** Much like Hailee’s general aura, this recipe was no-frills, yet undeniably special: A single layer; a batter elevated with lemon zest, greek yogurt, and almond extract; topped with fresh whipped cream and strawberry slices. And still so good on day three. Check out the original recipe and her accompanying video.
